Tonight’s Ghetto Gourmet is a combination of laziness and the need for comfort food. I have been a bit under the weather the past few days so I was craving chicken noodle soup. But I didn’t just want the can or box that I had available. So I decided to Ghetto some shit up. I had a chicken breast in the fridge that I had been marinading in balsamic vinaigrette; I was halfway to gourmet right there. So here is the recipe for how I made it into a curative ghetto soup for the soul.
Baked Ghetto Noodle Soup
Ingredients: Chicken breast marinated in balsamic vinaigrette, package of Instant Lunch chicken soup, handful of sliced mushrooms, garlic powder, onion powder, black pepper, butter, water, few shakes of hot sauce.
In an oven safe dish, I used a pie plate, place chicken breast (cut up or whole, your choice), dump package of Instant Lunch over chicken, throw handful of mushrooms on top of that, add spices, then drop a big spoonful of butter on that, add about half of the package recommended water to the mixture, drizzle hot sauce to taste over all of that. Cover with foil and pop into the oven on about 400 for 30 minutes. I cooked the mixture uncovered for the last 8 minutes to crisp up some of the noodles.
After cooking, dump into a big comforting bowl. Eat with a fork. This turns out a bit thicker than soup, which is what I wanted. Drink the remaining broth right from the bowl.
If you don’t feel better after totally making Instant Lunch palatable then you are beyond feeling better. This shit is actually tasty. And I am feeling a bit more myself. That proves the power of garlic and hot sauce as a cure all.
